MICHELIN award-winning Welsh chef Bryn Williams has dropped teasers about his highly-anticipated new restaurant to open in Mold's Theatr Clwyd.

The internationally-acclaimed chef discussed his plans for his latest restaurant to be located at the soon-to-be newly refurbished Theatr Clwyd on this week's episode of Saturday Kitchen Live (BBC, November 23).

Hailing from just a few miles from the heart of Theatr Clwyd, Denbigh born Bryn Williams is a talented Welsh Chef who has made a significant mark on the culinary world.

"I've got a restaurant opening June 1 in Theatr Clwyd. It's a theatre in Mold", Bryn explains to show host Matt Tebbutt, while cooking up a treat.

Proud Welshman and actor Luke Evans who also featured in the episode quickly added: "It's a very well-respectable place."

Bryn describes the highly-anticipated restaurant as a bistro, serving traditional and classic 'all meat' dishes inspired by the surrounding landscape, the Vale of Clwyd.

"What you're looking at is what you're going to be eating."

His existing restaurants include the acclaimed Odette’s in London, Colwyn Bay’s Porth Eirias, a beach-front restaurant, café & bar on the North Wales Coast, The Cambrian in the stunning Swiss Alps, and The Touring Club in Penarth.

He has also been employed in some of the most prestigious kitchens in London. Working under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche, and as senior-sous at The Orrery. Bryn has been Chef Patron of Odette’s since 2008.

The new business venture was confirmed in May this year. Liam Evans-Ford, Theatr Clwyd’s Executive Director, said: "We are deeply excited to be working in partnership with Bryn on our food and drink offer at Theatr Clwyd - including restaurants, bars, and in all our event and retail spaces.

The new restaurant will open in 2025 in Theatr Clwyd’s building following completion of the redevelopment project.
